Rotisserie Chicken

Preheat the oven to 450 degrees. Rotisserie chicken is something that has become a staple in our house. You can pickup a whole chicken at the store and season it with spices you probably have on hand in your kitchen. We’ve learned a few techniques that have made each chicken we roast turn out better and better.

The first thing to getting a rotisserie chicken with a skin that has a little crispiness to it, but the meat isn’t dried out is by separating the skin from the meat. This is a process that we have learned makes a huge difference – but you have to be gentle. Take your fingers and gently slide them under the skin pulling it away just enough to separate but careful not to rip the skin.

After you’ve separated the skin from the meat it is time to season it. First start by rubbing ghee all over the skin and then under the skin. Mix together all the seasonings for the rub and season generously all over and under the skin. After that set the chicken on a roasting rack inside a roasting pan. Roast in the oven for 45 minutes breast side up, then decrease the temperature to 400 degrees and flip the chicken over continue baking for 25 minutes or until the internal temperature is 150 degrees. While the chicken is roasting cook the honey garlic lemon glaze.

Rotisserie Chicken Seasoning

For the honey garlic lemon glaze combine all the glaze ingredients garlic cloves, lemon zest, lemon juice, honey, cayenne, and ghee in a small saucepan. Bring the glaze to a boil and then reduce heat to let it simmer. Continue simmering until the sauce has reduced about half, but keep an eye on it because it will burn easily. After you pull the chicken out of the oven you will need to let it rest for 20 minutes on a cooling rack – the chicken will continue to cook as it rests; as the chicken rests you will be able to glaze the chicken with the honey garlic lemon glaze.

Lemon Honey Garlic Rotisserie Chicken
Delicious juicy rotisserie chicken with a lemon honey garlic glaze.
Ingredients
  • 4 lb chicken
  • Chicken Rub Ingredients:
  • 1 tsp pepper
  • 2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cumin
  • 1/4 tsp cayenne
  • 1 1/2 TBSP ghee or butter flavored shortening
  • 1 tsp salt
  • Glaze Ingredients:
  • 5 cloves garlic, finely chopped
  • zest of 1 lemon
  • 2 TBSP lemon juice
  • 1 1/2 TBSP raw honey
  • pinch cayenne pepper
  • 1 TBSP ghee or butter flavored shortening
Instructions
Preheat oven to 450 degreesClean chicken under cold water & remove any innards from the chicke Separate skin from the meat of the chicken by gently working fingers under the skin, but be careful no to tear the skinRub ghee on the chicken and under the skinSeason the chicken with the chicken rub on top and under the skinPlace on a roasting rack inside a roasting panRoast chicken in oven breast side down for 45 minutes then flip the breast side upPlace chicken back in the oven and reduce heat to 400 degrees, baking for an additional 25 minutes or until chicken breast temperature reached 150 degreePull out the chicken and place on a cooling rack – this helps the skin stay crispy. Let the chicken rest for 20 minutesWhile the chicken is baking. We will make the honey garlic lemon glaze.In a small saucepan, combine all the glaze ingredients – ghee, garlic, lemon zest, lemon juice, honey, and cayenne.Bring mixture to a boil and then reduce heat to a simmer.Continue cooking until the mixture has reduced by about half. Be careful because the glaze can burn quickly.While the chicken is resting spoon the glaze onto the chicken; flip chicken over and repeat on other side.Cut up chicken and enjoy!
